1/2 cup Sabudana, 4 cups of full-fat milk, ½ cup sugar, 7-8 saffron strands, ½ tsp cardamom powder, 2 tbsp milk, 2 tbsp ghee, ½ cup mixed nuts, ½ cups dry fruits.

Wash and rinse the sabudana thoroughly in water to remove excess starch.Soak it in water for 2-3 hours or overnight until the pearls become soft and translucent.

In a heavy-bottomed pan, bring the milk to a gentle boil.Lower the heat and simmer the milk for 5-7 minutes, stirring occasionally to prevent it from sticking.

Drain the soaked sabudana and add it to the simmering milk.Stir continuously to avoid lumps. Cook on low heat until the sabudana turns translucent and the mixture starts to thicken.

Meanwhile, take a bowl and add warm milk and kesar, mix and keep it aside.

At this stage, add kesar milk to the kheer along with cardamom powder, sugar and keep stirring.

Take another pan and dry roast the nuts and dry fruits, crush them into small pieces.

Add dry fruits to the Kheer and enjoy!
