There’s no denying that the best of the meat delicacies come from the quintessential desi dhabas. One such popular street treat is the classic Chicken Curry, which tastes heavenly when prepared with desi spices. So, if you too want to recreate this magic at home, then try out this easy recipe by following some steps given below.

500–700 g chicken, 1/2 cup curd, 1 tsp turmeric, 1 tsp red chili powdersalt to taste, 2–3 tbsp mustard oil, 2 large onions, 2 tomatoes,1 tbsp ginger-garlic paste, 2 green chilies,b1 tsp cumin seeds, 1 bay leaf, 5 cloves,1 small cinnamon stick, 4 black peppercorns,1 tsp coriander powder1 tsp cumin powder, 1/2 tsp garam masala, 1 tsp red chili powder, fresh coriander leaves for garnish, water as needed.

To begin with this easy recipe, wash and cut the veggies. Meanwhile, clean the chicken pieces and keep them aside.

Now, in a large bowl, combine the chicken with curd, turmeric, red chili powder, and salt. Marinate for at least 30 minutes to 2 hours. Marinating helps tenderize the chicken and enhances the flavor.

Heat mustard oil in a deep kadai, then add in bay leaf, cumin seeds, cloves, cinnamon, and peppercorns. Sauté for a few seconds until aromatic.

Add the chopped onions and sauté them on medium flame until golden brown. This may take 10–12 minutes. Once the onions are well browned, add ginger-garlic paste and sauté for 2 minutes. Then, add the tomatoes and cook until the oil begins to separate from the masala.

At this stage, add ground spices, coriander powder, cumin powder, chili powder, and salt. Cook the masala until it turns deep in color, then add in the marinated chicken along with marinade. Cook well till the chicken is nicely cooked.

Add some water, garam masala, salt and pepper. Add in coriander leaves and ghee, mix it well and simmer the chicken.
